Dragon Boat Festival
DUAN WU AN KANGZhou Chu of the Jin Dynasty wrote in Records of Local Customs, "On the Dragon Boat Festival in midsummer, people cook ducks and horn-shaped zongzi". This was the first time zongzi was firmly linked to the Dragon Boat Festival. After that, whether it is the story of Wu Zixu, the tale of Cao E or the legend of Tai Tai controlling floods, all versions express the same folk sentiment: respect for loyalty and sacrifice, and wishes for the peace of the homeland and families.

粽子外看是食物,内看是仪式。Zongzi looks like food, but it carries a deep ritual meaning inside.
形状 Shape
形状——“角”通“吉”。古人以牛为最高祭品,角黍模拟牛角,象征“阳”;菰叶色青属“阴”,阴阳相抱,驱邪纳福。
The word "horn" sounds similar to "lucky" in Chinese. Ancient people regarded oxen as the most valuable sacrifice. Horn zongzi, which looks like ox horns, stands for "yang". The green leaves stand for "yin". The combination of yin and yang is believed to drive away evil and bring good luck.
色彩 Color
青、白、红、黑、黄五色丝线,对应五行,缠在粽上即为“结绳辟邪”。
The five-colored silk threads (green, white, red, black and yellow) match the Five Elements. Tying them around zongzi is a way to "ward off evil with knotted strings".

From the Tang Dynasty, when scholars used zongzi to symbolize "passing the imperial exam", to the Song Dynasty, when vendors in Bianjing piled zongzi into pavilions to advertise in zongzi markets, zongzi has long been a symbol of public emotion, connecting family, exams, business and wanderers.

DUAN WU AN KANG
一只嘉兴鲜肉粽的诞生。
The Birth of a Fresh Meat Zongzi from Jiaxing.
材料(十量只)
Ingredients (for 10 zongzi)
箬叶50张、圆糯米1 kg、猪
五花肉500g、咸蛋黄10颗、生抽60 mL、老抽15 mL、白糖15 g、黄酒30 mL、盐、姜汁、五香粉、棉线若干。
50 reed leaves, 1 kg round glutinous rice, 500 g pork belly, 10 salted egg yolks, 60 mL light soy sauce, 15 mL dark soy sauce, 15 g sugar, 30 mL rice wine, salt, ginger juice, five-spice powder, some cotton threads.
步骤1:备叶。
Steps:1. Prepare the leaves
箬叶煮沸10 min去涩,捞出
过冷水,刷净叶背,剪去硬梗,浸在清水中备用。
Boil the reed leaves for 10 minutes to remove the bitter taste. Take them out, rinse with cold water, scrub the back clean, cut off the hard stems, and soak in clean water for later use.
2.腌肉
2. Marinate the pork
五花肉切成丁,加生抽、老
抽、糖、黄酒、姜汁、五香粉抓
匀,覆保鲜膜冷藏4 h以上,让脂肪层吸足酱色。
Cut the pork belly into small cubes. Add light soy sauce, dark soy sauce, sugar, rice wine, ginger juice and five-spice powder. Mix well, cover with plastic wrap and put in the fridge for at least 4 hours, so that the fat can fully absorb the sauce flavor.
3.泡米
3. Soak the rice
糯米淘洗后清水浸泡6 h,沥
干后加2g盐、5mL老抽轻轻拌
匀,使米粒呈浅褐色。
Rinse the glutinous rice and soak in water for 6 hours. Drain the water, then mix with 2 g of salt and 5 mL of dark soy sauce gently, until the rice turns light brown.
4.裹粽(“三叠角”法)
4. Wrap the zongzi (Three-Fold Horn Method):
①两片叶子毛面相对,叶柄朝外,1/3处折成漏斗形状。
① Put two leaves with their rough sides facing each other, stems pointing outward. Fold at the one-third mark to make a funnel shape.
②舀入一层米,压一块肉、一颗咸蛋黄,再盖一层米,米量占漏斗2/3。
② Scoop a layer of rice into the funnel. Press a piece of pork and one salted egg yolk on it, then cover with another layer of rice, filling two-thirds of the funnel.
③折下叶片盖住米,两侧内
压形成第三个角,顺势将长叶尾折向一侧缠绕;用牙咬住棉线一端,绕粽。
③ Fold the extra leaves down to cover the rice. Press both sides inward to form the third corner, then wrap the long end of the leaf around the zongzi. ④ Bite one end of the cotton thread with your teeth. Wrap the thread around the zongzi in a cross shape, tie it tightly and leave a 5 cm loop as a handle.
5.烹煮
5. Cook the zongzi
大锅水宽,水没过粽面10cm,大火煮沸后转文火2.5 h;中途加水须沸水温,避免“激水夹生”。
Put the zongzi in a big pot and add enough water, which should cover the zongzi by 10 cm. Bring to a boil over high heat, then turn to low heat and cook for 2.5 hours. If you need to add water during cooking, use boiling water to avoid making the rice half-cooked.
6.回香
6. Let it soak for better flavor
关火后再焖1 h,让脂肪与酱
油在糯米间隙完成最后的“交换”,出锅后轻抖即透油。
Turn off the heat and let the zongzi sit in the hot water for another hour. This allows the fat and soy sauce to mix well with the rice. When you take them out, a light shake will make the oil come out.
Tips:
北方甜粽可把肉换为蜜枣与豆
沙,煮时加1L水中火1.5 h即可
For northern-style sweet zongzi, replace the pork with honey dates and red bean paste. Cook in 1 liter of water over medium heat for 1.5 hours.
当青叶在蒸汽中由碧绿转成墨

At that moment, zongzi is more than just food—it is a letter opened by steam: "The year you left home, the calamus by the door was shorter than your knees. Now it has grown up to the window. I hang the wrapped zongzi on the kitchen beam, like a string of small moons, waiting for you to come back."
